Expectedly light with cereal sweetness (Pops, Corn Flakes), a bit of yeast, and banana. Hints of dried apricot and orange pop here and there while corn, hay, and light (borderline artificial) vanilla frosting pop up. Slightly sweet flavors that are sadly at ends with the watery texture. Light brown sugar, banana, and cornbread. Bit of buttery corn essence that I like, but it’s fleeting. Youth is less distracting than the low bottling strength. A bit floral and effervescent with honey and bright caramel. Not unpleasant, but definitely watery and stops well short of leaving an impression. Penelope Bourbon was created in 2018 by lifelong friends Mike Paladini and Danny Polise. The name is a nod to Mike’s daughter Penelope. The bourbon is a blend of wheat and rye bourbon mashbills, which are aged separately before being blended and bottled. The bourbon is aged in barrels charred with #4 staves and #2 heads. This first batch of Penelope Bourbon is comprised of 6 barrels totaling 1,900 bottles.
